In the Beginning... A Divine Tofu Intervention

I've been an on-and-off vegetarian for a number of years, but lately it's an all omnivore diet. I always toy with the idea of going back, but it just seems too easy. I went to visit a friend in Atlanta over the weekend and traveled to the Vietnamese area of town. We stepped into Tofu House.

Tofu House was filled with wonderful foods I've only seen on food travel shows and on the web, so seeing them in person was exciting, especially because everything was so new and interesting. Brightly colored rice, gelatinous and squishy desserts, and of course a large buffet-style hot case of different tofu's.




I was inspired to do a one-week vegan experiment because of a divine tofu intervention I had here. It was delicious, it was 3 pieces of lemongrass and chili tofu and 3 pieces mushroom tofu. Yum!

So I thought to myself, "Let's one-up from the last time and go vegan." I'll try this for one-week and see how it goes.
